Love of India's Green Cardamom (Elaichi), known as the Queen of Spices, has a delicate sweetness & a beautiful aroma when added to food. Green cardamom pods have a herbal, citrus, slightly sweet flavor. It's a good option for both sweet and savory dishes. It is used to flavor tea, sweets/desserts, lentils, and rice. It's ideal in curries, halwas, baked goods, and biryanis.

The first crop of seed capsules is harvested in the third year after planting. The tree flowers from April to August and the seed capsules are harvested at 30 to 40 day intervals. Farmers need to harvest at the correct stage of maturity to produce high quality 8mm+ size cardamom capsules.
